of course, as with any new technology there are detractors – another view on the good/bad of sous vide can be read here. At Bombay Ice Cream, we at least think it is new and exciting – although it is unlikely to enter the average home for a long while yet.
Perhaps part of the reticence to accept sous-vide is that has taken a lot of the “art” away from the kitchen and replaced it with science. This leaves less room for blagging it – in a clear plastic bag then there is not really anywhere to hide!
